Hey Grandma, When Do We Eat?
Something old, something new … Anyone remember being a kid, and having Old-Fashioned Meatloaf? If not, you better try this, and let me know what you think is better (lol).
This was one of the recipes that every family made, but has been lost as a “treasure” with the advent of fast food and many other quick and easy meals.
My favorite combo was meatloaf and baked macaroni and cheese.

Ingredients
- 2 cups finely chopped onion
- 1 tbsp minced garlic
- 1 rib celery, chopped fine
- 1 carrot chopped fine
- 1/2 cup chopped scallion
- 2 tbsp unsalted butter
- 2 tsp salt
- 1 1/2 tsp Fresh Ground Pepper
- 2 tsp Worcestershire Sauce
- 2/3 cup catsup
- 1 1/2 lbs ground chuck
- 3/4 lb ground pork
- 1 cup fresh breadcrumb
- 2 large eggs beaten lightly
- 1/3 cup parsley leaves minced

Instructions
- Preheat oven to 350° F,
- In a large heavy skillet cook onion, garlic, celery, ;arrot, and scallion in butter over moderate heat, stiring, 5 minutes. Cook vegetables, covered? stirring lccasianally. until carrot is tender, about 5 minutes nore. Stir in salt, pepper. Worcffstershire sauce, and 1 cup of ketchup and cook, stirring. 1 minute.
- In a large bowl combine well vegetables, meats, 'read crumbs, eggs, and parsley. In a shallow baking an form mixture into a 10- by 5-inch oval loaf and spread remaining W cup ketchup over loaf.
- Bake meat loaf in oven 1 hour, or until a meat therlometer inserted in center registers 155° F.
- Serve meatioaf with ketchup. Serves 4 to 6,
