But first, let us discuss the differences:
Baby Back Ribs –
These come from the top of the ribcage between the spine and the spare ribs of the pig. They have meat between the bones and on top of the bones, and are shorter, curved, and usually meatier and leaner than St. Louis ribs.
St Louis Ribs –
These come from the belly side of the rib cage, below the section of back ribs and above the breast bone. They contain more bone than meat, but they also have more fat content which can make them more tender then the Baby Backs.
We prefer the St Louis Style Ribs.
This is one of our “most requested” recipes, which Paulina continues to tinker with .. and, we continue to love it even more. Paulina uses one of my cookbook’s recipes (from Smoke and Spice). Her 2 main recipes include “Wild Willy’s Number One-derful” rub, and “Southern Sop“. She’s known to tinker, well always!

- 4 lbs Pork or Beef Ribs St Louis Style
- 1 tsp sea salt
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp chili powder
- 2 tsp ground black pepper
- 2 tsp ground Cumin
- 2 tsp cayenne pepper
- 2 cups cedar vinegar
- 1 cup water
- 3 tbsp ground black pepper
- 2 tbsp salt
- 1 tbsp Worcestershire Sauce
- 1 tbsp paprika
- 1 tbsp cayenne
- 3/4 cup paprika
- 1/4 cup ground black pepper
- 1/4 cup salt
- 1/4 cup sugar
- 2 tbsp ground mustard
- 2 tbsp chile powder
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tsp cayenne

Paulina's Number One-derful Rub

- Place the oven rack in the middle of the oven and preheat oven to 200F. Combine all spice ingredients together in a small bowl and stir to combine to create the rub.
- Rub both sides of the ribs with the spice rub and place the ribs on a baking sheet, rib side down.
- Bake the ribs for about 8 hours, no turning required.
- Set the oven to broil and cook the ribs for 5-10 minutes to brown the meaty side.
