Make the crunchy croutons and a simple creamy dressing with anchovy fillets, Worcestershire sauce, mayonnaise, Dijon mustard, and lemon juice. If you’re not a fan of anchovies, just leave them out; the dressing will still taste amazing. This savory salad is rich enough to be a main dish.

Ingredients
- 2 small garlic cloves minced
- 1 tsp anchovy paste or whole filets
- 2 tbsp lemon juice about 1 lemon
- 1 tsp dijon mustard
- 1 tsp Worcestershire Sauce
- 1 cup mayonaisse optional, I use 1 raw egg
- 1/2 cup Parmigiano-Reggiano
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 11/2-2 heads romaine lettuce torn into bite-sized pieces

Instructions
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
